Pâte à Brioche

Brioche dough is enriched bread: flour and yeast given body by eggs, butter, and sugar. The high fat content means the gluten develops slowly and the dough must be cold-retarded to handle without sticking — and to develop its flavour. Of the three versions here, MDC is the richest (no milk, only eggs and butter); BPàP is a lighter boulangerie-style dough balanced with milk; and Grolet's Opéra version sits between them. The method is the same for all three: build gluten first, add butter last, cold-proof overnight.
Method
Pétrissage (kneading)
- Combine all ingredients except butter in the stand mixer with the dough hook. Mix on low speed (speed 1) for 4 minutes, then medium (speed 2) for 6–8 minutes, until the dough is smooth, elastic, and beginning to pull away from the sides.
- Add the butter in small pieces with the machine running on medium. Continue kneading for 7–8 minutes after all the butter is incorporated. The dough should be smooth, slightly tacky, and pass the windowpane test — a thin piece stretched between your fingers should form a translucent membrane without tearing.
- For the Grolet version: mix all but butter at speed 1 for 35 minutes, then add butter at speed 2 for 8 minutes.
Pointage (bulk rise)
- For BPàP: first rise at room temperature 30 minutes, then fold (un rabat), cover and cold-retard at 4 °C for 10 hours.
- For MDC and Grolet: rest 30 minutes at room temperature, degas, film the dough directly, then refrigerate for at least 1 hour — overnight preferred. Grolet leaves the dough covered with a damp cloth for 10 hours at room temperature.
- The cold retard is not just for timing convenience: the chilled fat firms the dough enough to shape cleanly and develops deeper, more complex flavour through slow fermentation.
A reliable schedule (Brioche 101): 1 h pointage at ~24 °C, then ~20 min in the freezer to halt fermentation, then 12–24 h at 4 °C. Keep the final proof at 26–28 °C — never above 28 °C, which starts to kill the yeast.
Shaping
- Nanterre: Divide into 7 pieces of ~50 g. Roll each into a tight ball. Arrange in a buttered rectangular loaf tin in a quincunx pattern. Proof 1.5–2 h at 27 °C with humidity.
- Tressée: Divide into 2 pieces of ~300 g. Roll each into a 50 cm rope. Cross and braid. Transfer to a lined tray.
- Brioche à tête: Divide into 6 pieces of ~50 g. Form a small ball for the head (tête) and a larger body. Press the tête into the top of the body in a fluted tin.
- For all shapes: proof at 27 °C / 80% humidity for 1.5–2 hours until visibly puffed and jiggly.
Dorure & cuisson
- Brush gently with egg wash before proofing and again just before baking. The second coat gives the deep shine.
- Bake at 180 °C: 20–25 min for large shapes (Nanterre, tressée); 15–18 min for individual brioche à tête. Internal temperature should reach 92–95 °C.
- Cool on a rack. The crumb will set as it cools — resist cutting too early.
Background
The sequence — gluten first, butter last — is essential. Adding butter too early coats the flour proteins before they can form bonds, resulting in a dough that never develops enough strength to hold its shape or trap gas efficiently. The dough must be fully kneaded and pass the windowpane test before a single gram of butter goes in.
The butter must be at room temperature — soft but not melted. Cold butter tears the gluten network; melted butter incorporates too quickly and produces a greasy, dense crumb. Aim for a consistency like thick cream cheese: it should smear easily without resistance.
The cold fermentation is where flavour develops. A room-temperature rise of 2 hours gives a dough with clean, simple butter-and-egg flavour. An overnight refrigerator rise gives complexity: lactic acid bacteria produce trace amounts of organic acids that round out the sweetness and add depth. This is why bakery brioche tastes different from rushed home brioche.
The MDC version (300 g eggs, 250 g butter for 500 g flour) is a rich "butter brioche" with no milk — the eggs provide all the liquid. This produces a moister, richer crumb that toasts beautifully but is delicate to handle. The BPàP version, balanced with milk and less butter, is easier to shape and slightly less rich — better for high-volume production or shapes that need to hold definition.
Mistakes I've Made
- Dough didn't pass windowpane test before adding butter. The subsequent kneading never fully recovered the structure. The baked brioche had irregular large holes and a gummy crumb.
- Butter too cold. It tore the dough in visible clumps that took many minutes to incorporate. Always bring butter to room temperature before using.
- Shaped the dough while still too warm. The butter was nearly at melting point — the dough stuck to everything and lost its shape. Refrigerate the dough thoroughly before shaping.
- Over-proofed before baking. The dough collapsed in the oven. Brioche is ready to bake when it has roughly doubled and feels airy when gently poked — it should spring back slowly. If it doesn't spring back at all, it has gone too far.
- Didn't double-coat with egg wash. The first coat before proofing acts as a primer; the second coat just before baking provides the deep gloss. One coat gives a dull, pale crust.
